We are super excited about this - our first foray into a serious lunch offering at Blackstar. And.. we're happy with the end result. The vision here is simple. To take our passion and dedication to coffee roasting and apply it to roasting the best lunches in Brisbane. And.. to make it affordable also.
Fresh. Consistent. Mouthwatering roast lunches. Dine-in or takeaway. This has led us to the best suppliers. Much thanks to Piggy In the Middle (our farmers) and Le Bon Choix (our bakers) for doing what you do. ROASTIES have been 6-months in development. So it's not simply a new menu - but more like the beginning of a new food business.
We bought a new combi oven. We batch roasted many many times, multiple different roast recipes and meats. And we tried so many types of gravies! We went to all the bakeries before we found the one bread to rule them. A lot of attention to detail. Even down to the slaw dressing! With its pop of Kefir lime. Not to mention the garnish and seasoning which provides the texture and Umami to make Roasties what they are.
Our owner Marty has been working on this one himself, with food specialist Brent Southcomb (former Head Chef from Carlton Crest) providing expert support and guidance. Always our Head Chef Tu Nguyen is the backbone of the kitchen and more recently Chef Nello has joined us to lead the Roasties charge. Our plan is to make lunch at BLACKSTAR a phenomenon. For sure Pork Banh Mi will be hard to beat (admittedly they are good and cheap). But we will give it a crack.
BREAD - Ciabatta - always fresh and soft
MEAT - low-slow cooked pasture-raised, pulled pork and pulled beef, melting kind of texture
SLAW - house made, hand-cut, every morning
GRAVY - we make Au Jus, from the roast. Again, hand made!
VEGGIES - seasonal, locally sourced, carefully roasted, range of colours
GARNISH - for added crunch we have "crispies" as chef Nello calls them. Shards of sweet potatoe etc.
HERBS - the secret weapon. Actually, secret magic umami dust to help spark the dish.
PORK ROASTIE (Ciabatta, herb mayo, slaw, pulled pork shoulder 8 -10 hour roast, veg, gravy, garnish, seasoning)
BEEF ROASTIE (Ciabatta, herb mayo, slaw, pulled beef brisket 8 -10 hour roast, veg, gravy, garnish, seasoning)
VEG ROASTIE (Ciabatta, vegan mayo, seasonal veg, falafel, slaw, garnish, seasoning)
ROAST PORK BOWL (same as Pork Roastie but without the Ciabatta. Served with Avo - GF, KETO)
ROAST BEEF BOWL (same as Beef Roastie but without the Ciabatta. Served with Avo - GF, KETO)
ROAST VEG & FALAFEL (same as Veg Roastie but without the Ciabatta. Served with Avo - VEGAN, GF, VEG)
